All 45 villas are fully serviced and sit on large plots of land ranging from 4,500 square meters to 11,000 square meters each. In the world of luxury villas, size really does matter! We cater to those who appreciate the finer things in life and we have made every effort to ensure that our elegantly furnished and thoroughly modern residences are serviced with love and care.
The living/dining/kitchen areas are fully air conditioned and can be opened on to lotus ponds and the swimming pool in the garden to create a typically Balinese open air pavilion. All bedrooms overlook the swimming pools and they are private and self contained within each villa space. They all have en-suite bathrooms (most have additional outdoor shower areas), air-conditioning, flat screen TVs, ceiling fans and king sized beds.
All 45 villas at Sentosa Private Villas and Spa, Bali, are chic and elegantly decorated, making them the perfect tropical retreat or entertainment venue.
Our luxury villas feature private swimming pools and sundecks with reclining loungers and are surrounded by tropical gardens and a large poolside bale. Indoor/outdoor marble bathrooms with generous sunken baths are standard.
The living/dining areas feature fully equipped gourmet kitchens with full size refrigerators and fully stocked maxi bars.
Air-conditioned bedrooms (complete with ceiling fans), all have ensuite master bathrooms, marble floors, spacious wardrobes and study desks. Bedrooms also feature flat screen televisions with integrated DVD system and satellite channels, IDD telephones, broadband and internet access and digital safety deposit boxes.

Masterminded by Executive Chef Bill Collier, the new dining destination is devoted to honoring the traditional delicacies of Italian cuisine with a savvy contemporary epicurean edge. To cement the restaurants evolution, EVO also presents a sassy take on the nostalgic era of vintage Italian style eateries with sleek vogue-like interior designs throughout the remodeled dining areas.
EVO whose acronym denotes Extra Virgin Olive Oil, is the culinary opus of master chef Bill Collier who’s Italian-New York background inspired the personalized dishes drawn from his family heritage. “At EVO we maintain all the traditional flavors, but there are no pedestrian style dishes here. The flavors are designed to take you back to the source of Italian cuisine, yet offer a progressive twist on tradition with some modern panache’, says Chef Collier.
The concept of EVO evolves from Chef Collier’s culinary history which spans more than 25 years in feted kitchens across New York, San Francisco and Asia. Although Chef Collier’s cuisine has been previously lauded for his groundbreaking California-French styles, he always harbored a fetish for creating dishes that his Sicilian grandmother mastered and taught him throughout his life. As such, EVO’s menus are filled with a strong emphasis on scratch-made, house-cured and long-simmered flavorful dishes encouraged by the Chef’s flair for creating exciting new next generation cuisine.
“EVO is Italian with a New York accent! It’s about house-made pastas, pizzas, sausages and cured meats using centuries old curing methods and techniques. However we construct our dishes with sophistication and restraint to appeal to modernized palates. The combination of ‘century-old to century-new’ offers an incredible dichotomous dining experience”, adds Chef Collier.
EVO’s menu begins with more than a dozen tempting Qualcosina (little something) offerings such as a delectable Lobster Crema Crostone, with basil and olive oil and Chef Collier’s Claypot Meatballs with Grandma’s Sunday Ragu – slow cooked to perfection with chianti wine, red onions and tomatoes imported from San Marzano that melt like butter when they hit the tongue.
The Salumeria (cured meats and cold cuts) are given extra attention with house-made sausages and cured meats like Chef Collier’s signature of Six Week Dry Cured Pepperoni or imported Spanish and artisan Bali offerings like a three year aged Pata Negra Belotta, the world’s most exclusive cut, designed to satiate any charcuterie lover’s palate.
A Crudo menu with zesty offerings such as Tenderloin of Wagyu Beef, Red Tuna and Jack Fish are accompanied by lemon, rucola, sea salt and extra virgin olive oil with another EVO specialty, a must try bevy of Scottadita Lamb Chops with Fava beans, Red Onions and Balsamico.
EVO’s menu also offers meat and seafood selections, insalata and panino, contorni and a perfection of Pizze cooked in a wood fired oven indulging guests with Chef Collier’s Sicilian grandmother’s secret recipe of double fermented wild yeast dough. Each new batch takes a ‘mother scoop’ from the last to ensure consistency and a signature flavor.
The revamped EVO not only includes a new bill of fare but a glamorous interior and exterior refurbish also envisioned by Chef Collier. “The existing wooden ceilings, stone columns and ambience of the venue lent itself to a Mediterranean alfresco dining scene” he says.
Four separate dining areas including a 60 seat main dining ‘cool’ room sumptuously decked out with soft white padded leather booths in bold curving forms along with oversized winged chairs and private nooks designed to make dining an intimate pleasure akin to being on the set of a modern day Frederico Fellini movie. This non-smoking room is temperature controlled by an air-cooled curtain and is bedecked with a stunning backlit pop-art mirrored wall that showcases a film strip of Italian screen legends such as Sophia Loren,Gina Lollobrigida and hand scribed recipes.
An open air poolside section accommodates up to 50 guests (or 100 for private functions) with seating on rich plum colored banquettes and plush velvet quilted back rests and chairs and silver rimmed red roman ceiling candles. A convivial Lounge area allows for up to 20 guests to enjoy a more informal dining experience whilst the central EVO Isola Bar with liquid copper bar tops and giant ‘Alice in Wonderland’ style bar stools is the perfect place for sipping an aperitivo, signature cocktail or enjoying a cigar or deserts under romantic honey colored domed ceiling lights.
Chef Collier has also introduced a range of molecular signature cocktails that have been ingeniously created using techniques that teach bartenders to think like chefs. A Mixology Program has been designed to encourage creativity with molecular cocktails such as a decadent Chocolate Martini using pure cocoa liqueur encapsulated with Strawberry Caviar on a rim salted glass using White Chocolate Salt.

Every Tuesday and Thursday you can chill at EVO and give your ears a holiday of their own as they listen to the cool and soothing sounds of acoustic tunes played live.
The rest of your senses will be delighted by the delicious selection of EVO cocktails, beers. mixers and our unique Satay Bar from 6.00pm – 9.00pm.
RIJSTTAFEL NIGHT – INDONESIAN RICE TABLE
Enjoy our EVO Dinner Series every Friday from 7pm – 10.30pm with a Rijsttafel Night featuring Chef’s favourite Indonesian and Balinese specialties.
The Indonesian Rijsttafel, a Dutch word that literally translates to “rice table”, is an elaborate meal adapted by the Dutch from the Indonesian feast called Nasi Padang. It consists of many side dishes served in small portions, accompanied by rice prepared in several different ways.
EVO’s Rijsttafel Night also features live Balinese Gamelan and dances.
